California-The Golden State. I spent the first 23 years of my life living in perpetually sunny suburban SoCal. Golden skin, golden hair, golden sunsets…it’s as if my childhood memories have been touched by Midas himself.
California will always hold a special place in my heart, but it is no longer my home. My roots, my family, and our businesses are deeply rooted in North Texas where the weather is as fickle as a feather in the wind. Except for last week. Last week was grey, gloomy, and rainy for days on end.
In an attempt to boost the mood of my stir crazy children, I decided that we needed to make our own sunshine. Liquid sunshine that is. 3 simple ingredients and 5 minutes later, I had a beautiful jar full of Golden Juice. Sweet and refreshing, it’s one of my family’s favourite juices and a fantastic way to immediately flood your system with vitamins, minerals, and antioxidants.
The star of the show that turns what should be a very orange juice a divine golden color is the golden beet. The camera (ok, iPhone) doesn’t even do this beautiful juice justice. Sweeter than their red beet brothers, golden beets have a more mellow flavor and less earthy taste.
Beets: Full of iron, potassium and folic acid, golden beets are excellent for the heart and kidneys. Like many other orange and yellow fruits and veggies, golden beets are packed with vitamin c, vitamin a, potassium,and lycopene. They have been proven to lower blood pressure and cholesterol, treat anemia, and boost energy.

- 2 medium apples
- 3 golden beets
- 4 large carrots
- Run all the ingredients through the juicer and drink immediately for full absorption. Drinking freshly pressed juice on an empty stomach is even better for assimilation of nutrients. Serves 2
