Just like ranowla, smoothie bowls are ALL the rage on Instagram. What’s not to love? They are sweet, creamy, simple, and infinitely customizable. Frozen fruit, a little liquid, and a quick wiz in the blender and you’re ready for an antioxidant party in your tummy. So yummy, so yummy. Oh great, now I’m singing Yo Gabba Gabba songs.
What I love most about smoothie bowls is the toppings. I LOVE toppings. It must go back to my childhood visits to Golden Spoon frozen yogurt–a little bit of yogurt and 5 lbs of crushed Oreos and gummy bears. I digress… You can load your smoothie bowl up with fresh or frozen berries, bananas, coconut shreds, nuts, granola, hemp seeds, or whatever else tickles your fancy. May I suggest Cinnamon Mulberry Rawnola? Whatever you add, make it beautiful! We eat with our eyes first, so why not make it Instagram worthy?
Sometimes as a treat I’ll set up a toppings bar for my kids. They each get a bowl with the smoothie in it, and all the toppings are laid out on the table. They can top their bowls with fresh fruit and other healthy goodies to their heart’s content! Kids are so much more likely to eat their fruits and vegetables when they can be a part of the process. And how fun would a Smoothie Bowl Bar be as breakfast for a sleep over? So much better than greasy, sugary donuts!
This smoothie bowl tastes like those fancy blueberry lemon scones you get at the coffee shop without the sugar crash later. Why blueberries? Let’s take a look at these little nutritional gems.
Blueberries: Widely known for their antioxidant content, blueberries have been shown to improve memory, protect the cardiovascular system, lower cholesterol, and support a healthy blood pressure. High in nutrients and low in calories, blueberries are full of fiber, vitamin k, manganese, and our immune-boosting friend, vitamin c. Blueberries are also considered a low-glycemic fruit and are therefore suitable for those with blood sugar issues such as diabetes.
Blueberry Lemon Smoothie Bowl
- 2 cups frozen blueberries
- 2 fresh bananas
- Juice of ½ lemon
- Optional toppings: fresh or frozen berries, fresh banana slices, granola or rawnola, hemp seeds, nuts, coconut shreds, etc
- Add frozen blueberries, bananas, and lemon juice to your blender. Process on high until smooth. *note: If you are not using a high-speed blender such as a Ninja, you may need to add a tiny bit of liquid to this if it is not blending well. Keep the liquid minimal or you’ll end up with a smoothie and not a smoothie bowl. You want it thick and creamy.
- Top with your desired toppings and serve immediately. Serves 2 (or one really hungry person!)
