I don’t know about you, but when I find a new dish I like, I tend to eat it repeatedly. And when I say repeatedly, I mean 3-4 times in one week. While this isn’t an issue with a healthy, cost efficient, home cooked meal, it quickly becomes an issue when it’s an item at a restaurant. Such was my predicament recently when I discovered the Superfood Side Salad at Chick-fil-A.
On a whim one day, I was in the mood for a convince meal and knew that Chick-fil-A had a vegan salad on the menu. When I asked if they could put the salad into a flatbread wrap and was answered with a “My Pleasure,” my fate was sealed. This salad of kale, broccolini, and a maple vinaigrette is only made more filling and easier to eat by placing it in a wrap. Needless to say, by the end of the week when I had pulled through the drive thru a 3rd time, my wallet was not very happy with me. I resolved to find a way to make this dish at home using healthy ingredients (no preservatives or refined sugars here) that were more budget friendly.
After a bit of experimenting, I think I’ve hit the nail on the head. A healthy, very green salad, wrapped in a whole wheat flat bread with an oil-free dressing made of easy to pronounce ingredients. My kids LOVED this wrap and even asked for the leftovers as lunch the next day. I served the wrap with some oil-free baked fries, just to make it feel like a fast food combo meal. I am honestly so pleased that my kids were excited to eat kale! I think the sweet and tangy dressing is what made it so appealing, but regardless, dark leafy greens for the win!
Kale: A member of the cruciferous vegetable family, kale is a fantastic source of vitamins K, A, and C, as well as manganese, copper, vitamin B6, and iron. It’s stellar antioxidant and flavonoid profile gives kale powerful anti-cancer and anti-inflammatory properties. Kale also has been proven to have cholesterol-lowering agents, digestive-aiding fiber, and compounds that help the body’s detoxification process.
This dish comes together in less than 15 minutes (if you aren’t making the fries). It is perfect for busy weeknights when you are running back and forth from school and activities. I recommend making a double batch of the salad, since the dressing goes a long way. The salad can be packed in a sealed container for school lunches or on the go with the wrap or a tortilla on the side to wrap up just before eating so it doesn’t get soggy.
Healthified Chick-fil-A Superfood Salad Wrap
Ingredients for the Salad Wrap:
- 1 bunch kale
- 1 bunch broccolini
- 1/4 cup dried cranberries
- 1/4 cup nuts, chopped (I used walnuts, but a mix of nuts would be lovely)
- 4 flatbread wraps (I found a very low oil whole wheat lavash at Sprouts)
For the Dressing:
- 1/4 cup maple syrup
- 2 TBS raw apple cider vinegar
- 1 TBS balsamic vinegar
- 1 TBS low sodium soy sauce (or gluten-free Tamari
)
- 1 TBS fresh lemon juice
- 1/8 tsp onion powder
- 1/4 tsp salt
- 1/8 tsp fresh black pepper
Directions:
- Chop the kale and broccolini. I cut the kale into 1/2 inch thick ribbons and the broccolini into bite sized pieces. Place into a large bowl. Set aside.
- Mix together the maple syrup, ACV, balsamic vinegar, soy sauce, lemon juice, and spices in a glass jar. Stir well.
- Pour 1/4 of the dressing on top of the kale and broccolini. Using clean hands, massage the dressing into the kale and broccolini. Really get in there and squish things! Massaging the kale will help break down some of tougher fiber so that it is much easier to chew and digest.
- Pour on more dressing to taste, taking care not to use too much or the wraps will be soggy.
- Add 1/4 of the salad mixture to each flatbread and top with dried cranberries and nuts. Roll into wraps and serve immediately. Any leftovers should be stored separately in lidded containers for up to 3 days. Serves 4.

Kale is awesome! You can totally eat this salad without the wrap too (which is how Chick-fil-A serves it), but putting it in a wrap makes it a perfect “on the go” meal! Please let me know how you like it 🙂
