While I love cooking (and blogging about it), I do enjoy dining out with friends and family on occasion. And thanks to growing demand from consumers, more and more restaurants are catering to us veg-heads. Even the most meat-centric of restaurants can be plant-based friendly if you know what to look for. You may not be able to completely avoid oil while eating out, but you can still get a plant strong meal that will leave you feeling powered up.

What My Plant-Based Husband Ate for “Lunch” Today: Lunchbox Edition

My husband works 6 days a week. The benefit of working locally is that he is often able to stop by the house for lunch while the little ones nap. We get a few minutes to chat and hang out before he heads back to work and the kids and I head out to run errands or go to dance class. Husband doesn’t usually make it home before 9:30 pm, so he has dinner quite late (#businessownerproblems). Around 5-6 pm he gets hungry, seeing as his last meal was 4+ hours ago. So I always pack him a “lunch/dinner” meal.

As a mom, I know that by the end of the school year lunch packing is getting pretty old. The sparkle has definitely worn off. The first week of school you send Pinterest-worthy Bento Box creations with heart-shaped sandwiches, homemade treats, and little inspirational notes for your special little snowflake. Then 8 long months of school pass. 250 peanut butter and jelly sandwiches later, you are approaching the final countdown to summer. By the end of May, your kid is lucky to get leftover pizza and a slightly bruised apple in his lunchbox. You. Are. Done. Lunch is our favorite meal of the day. We aren’t rushing to get out the door for school or just getting back home from dance class or errands. Even my oldest daughter, who’s in 1st grade, says that lunchtime is her favorite because she gets to spend it chatting with her friends and scoping out what other kids are eating. She often reports back to me that many of her friends bring candy and “junk food” to school, go crazy on the playground, and then fall asleep during “Silent Reading” time after recess. Is dinnertime more of a battlefield at your house than a time to sit and reconnect? Been there, sister-friend! My kids are 7, 5, and 3 and let me tell you, veggies have not always been high on their list of favorite foods. Over the years I have developed a little arsenal of tips that help me get veggies into my kids even when they are in an “I hate all things green, leafy, or healthy” phase. The current recommendations are to consume 5-9 servings of fruits and veggies per day. Fruits are usually easy enough to manage. They are sweet, easy to eat, and every kid has at least one favorite fruit. Those veggies tho…

This is a typical weekly produce haul for my family of 5. I shop on Sunday night or Monday morning and by Thursday I need to pop back into the store for more berries and tropical fruits since they don’t stay fresh more than a few days (and they are all eaten by Wednesday anyway!)
