Back when I was a newlywed, I read that the average American family makes the same 9 meals on rotation. 9 meals. 9 meals? “How can the vast flavors of the world be explored in just 9 meals?” I wondered. I vowed then and there that I would never allow myself to become the “average American family” in that regard. Butternut Squash Risotto and Spinach Apple Walnut Salad

While procrastinating on Facebook the other day, a “memory” post popped up on my News Feed from 3 years ago. In the post I was describing our dinner for the evening; Butternut Squash Risotto served with a Spinach Apple Walnut Salad. The comment thread had several people requesting the recipe. Present day me cringed at the use of copious amounts of oil, chicken stock, cheese, and the suggested addition of shredded chicken to make it “a complete meal.” Talk about a fat, cholesterol, and sodium overload! A couple of weekends ago, Husband surprised the kids and I with a spontaneous day trip to Dallas. We live in the suburbs and don’t get into the “big city” very often so this was quite the adventure. Before we set out, I checked Happy Cow to find a plant-based friendly restaurant. We decided on a very interesting looking health food chain called True Food Kitchen. On many occasions Husband and I have reminisced about our youth spent near the beach. Long hot days devoted to making sand castles, playing frisbee, collecting seashells, and cooling off in the salty Pacific are treasured memories we have of growing up in Southern California. As we got older, sand castle building was left behind in favor of beach volleyball, sun bathing, bonfires, and skim boarding (all while checking out the “talent” as we used to say). Although he was a surfer and I was more of a shore bunny, we both agree that the BEST post-beach food was a burrito.

Rainbow Bowls with Coconut Yum Yum Sauce

I have mentioned before that we are packing to move house. It is also the end of the school year, which means extra homework and projects for the parents, I mean, kids. Suffice it to say, my time is pretty limited these days. When our schedules get hectic, I like to take one night and make a BIG batch of rice and veggies that will not only act as dinner that night, but another night later in the week as well.

Sweet and Spicy Red Curry Un-Fried Rice

Faster than ordering takout!

The last time I went out for fried rice, it was a terrible experience. I was about 5 months pregnant with my 3rd child. I was exhausted, nauseated, and just plain grumpy. My poor husband was trying to take me out on a date and get my mind off of my misery. When the dish came, it was so greasy and salty! On top of that, the rice was overcooked (read: HARD) and it was more egg than rice or veggies. Needless to say, it did not help my pregnant tummy at all. I have not ordered fried rice at a restaurant since. 3 plus years, people! Sure, I have made it at home here and there, but it’s just not the same.
