Fajita Burritos


If you’ve been around this blog long enough, you know that I love me some potatoes. They are nutritious, filling, budget-friendly, and can be cooked in a variety of ways. While I was pregnant with my 3rd child, I had a huge aversion to eggs. Their smell, their texture, the fact that they came out of a chicken’s cloaca…all of it made my stomach churn. Even after she was born, the mere thought of eggs made me a bit queasy. I still dutifully made them for my egg-loving family several mornings a week, however, I have been sans-egg for almost 5 years now. As fall begins to feel more like, well, fall, I find getting out of bed to be hard. Don’t get me wrong. Since I quit coffee, I feel more awake and alert in the morning than I have in years, it’s just the actual standing up from my nice cozy bed when the alarm goes off to be the issue. She lives in Hawaii with her husband and 2 adorable kids and they eat a high-raw, plant-based diet (meaning LOTS of fresh, raw fruits and veggies). She has healed herself and her children from severe digestive issues, eczema, and asthma using whole plant foods. We are still in the dog-days of summer, but I am already beginning to crave the flavors of fall. Sweet, savory, and warm, the flavors of fall tend to be deeper and more rich than the fresh, juicy flavors of summer. When I think of fall, I think of crisp apples, warming cinnamon and nutmeg, and the king of fall flavors, the pumpkin. Before we are even ready to break out the long-sleeves, pumpkin flavors/scents can be found in everything from candles to coffee.

Confession time. During the whole moving process, not a lot of cooking happened around here. I wanted to get unpacked and settled ASAP, so home cooking took a back seat. As a result, there was a lot of ordering veggie pizza (and take out in general), cereal for dinner, and good ol’ pb&j’s.
