This recipe came to me in a dream. I was taking a very rare and coveted nap and when I woke up, I had a vision of a salad topped with baked sweet potato wedges coated in a crispy coconut crust clearly in my mind. The problem was, we were smack dab in the middle of moving and half of my kitchen was in boxes. So I jotted the idea down on a neon blue post-it note and placed it in a notebook, where it was promptly forgotten.

On many occasions Husband and I have reminisced about our youth spent near the beach. Long hot days devoted to making sand castles, playing frisbee, collecting seashells, and cooling off in the salty Pacific are treasured memories we have of growing up in Southern California. As we got older, sand castle building was left behind in favor of beach volleyball, sun bathing, bonfires, and skim boarding (all while checking out the “talent” as we used to say). Although he was a surfer and I was more of a shore bunny, we both agree that the BEST post-beach food was a burrito.

Sweet and Spicy Red Curry Un-Fried Rice

The last time I went out for fried rice, it was a terrible experience. I was about 5 months pregnant with my 3rd child. I was exhausted, nauseated, and just plain grumpy. My poor husband was trying to take me out on a date and get my mind off of my misery. When the dish came, it was so greasy and salty! On top of that, the rice was overcooked (read: HARD) and it was more egg than rice or veggies. Needless to say, it did not help my pregnant tummy at all. I have not ordered fried rice at a restaurant since. 3 plus years, people! Sure, I have made it at home here and there, but it’s just not the same. BBQ Ranch Chickpea Wraps

My husband loves BBQ Ranch Chicken Wraps. Almost every time we go out to American style casual restaurants, this is what he orders. While he hasn’t indulged in this craving since transitioning to a whole food, plant-based diet, his love for the flavor hasn’t disappeared. As a treat for him one night, I made BBQ chickpeas and he loved them. The hearty texture of the chickpeas and the tangy BBQ sauce totally hit the spot. Black Bean Stuffed Sweet Potatoes

Often times on the Internet I come across fusion food. Mexican Stuffed Pasta Shells, Tandoori Chicken Pizza, Thai Shrimp Tacos… While fusion food is always fun and interesting, it is almost always laden with meat, dairy, or oil. Since we eat a plant-based diet, I often like to play around with ways to “veganize” recipes that I find. I had recently come across a recipe for Taco Stuffed Potatoes, but yet again, it was covered in a thick layer of cheese, full of ground beef, and all the vegetables were drenched in oil.
